Peanut Butter Cup Ice Cream Pie is the perfect no bake dessert for any time of year!

I absolutely can’t believe that the month of August is almost over. Where did this summer go? Where did this MONTH go? Did you know that during the month of August there were several days devoted to pies? National Lemon Meringue Pie Day was Aug 15;  National Ice Cream Pie Day was Aug 18;  National Chocolate Pecan Pie Day was Aug 20; and National Peach Pie Day was Aug 24. I know that this is a few days late but I’m going to share with you a simple recipe for Peanut Butter Cup Ice Cream Pie. This was my first time making it but it definitely won’t be my last!

Ingredients

Oreo Pie Crust

1/2 Gallon Vanilla Ice Cream

Whipped Topping (not Whipped Cream)

1 Bag of Mini Peanut Butter Cups

Peanut  Butter Topping

5-7 Chocolate Oreos

Step One: Grind up 3/4 bag of mini peanut butter cups and chocolate oreos in food processor until crumbly. This will be your filling.

Step Two: Spread 1/4 gallon of thawed vanilla ice cream into bottom of oreo pie crust.

Step Three: Spread an even layer of peanut butter cup and oreo filling from step one right on top of vanilla ice cream.

Step Four: Spread remaining 1/4 gallon of thawed vanilla ice cream right on top of filling. Cover and put in freezer until firm. This will probably take a few hours.

Step Five: Before eating, spread whipped topping on top of pie and finish with cut up peanut butter cups. Drizzle with peanut butter topping (optional).

It was so delicious and it was a big hit with my family. My girls could not wait to get their hands on it!
