School is near.
Busy schedules are looming.
Kids, homework,  working, sports, after school activities…
Its about to get. real. crazy busy around here.
I need to have meals planned and ready to go before the kiddos get out of school.
I am determined to be organized this year! 
{and not get caught driving through Chic-fil-a for the third time this week} 
But I really really stink at cooking. It stresses me out.  
and then annoys me to tears when it goes down in flames!
and I end up feeding them noodles and cheese for dinner.
I want good, {as in tasty}, a hint of healthy and balance. 
And I want easy.  
My idea of easy is:
-slow cooker/rock pot} meals!
-rice with food in it! 🙂  (rice with seasoning, vegetables and some meat)
-baked dish meals (like enchiladas, bbq chicken, lasagna)
any combination that can be made early, simmer or bake and then be ready to go or close to it before the hungry munchkins are ready to eat off their arms!
I have a few ‘go-to’ recipes, but not enough.  
Do you have any to share?
If we all share a couple favorites, then imagine the number of options we could choose from.
Talk about being organized!  yeah for organized {and healthy} meals!

So link up your best (or two or three if you have) easy and one dish meals.
I’m excited!  Here is my favorite!
Pulled Pork and Black Beans
1 lb ground pork
1 pkg. pre-cooked pulled pork (we use Kirkland brand from Costco)
8 tins of black beans (drained)
chicken stock (1 box, or 2 cans)
1 chopped onion
chopped garlic
cumin
salt
thyme 
chili powder
Saute ground pork, onions, and chopped garlic.
Add spices to the mix to taste.
In slow cooker/crock pot:
black beans (drained, but keep the brine)
cooked ground pork mixture
add chicken stock
add more spices to taste (i’d love to offer up specifics here, but my best cook just shakes some in)
simmer low in crock pot all day (or 4 hours on high)
add some brine and more stock if needed to keep some liquid in the slow cooker.
Serve with white rice (we use basmati rice from Costco)
