Parmesan Crusted Chicken and Artichoke Bake is a delicious and easy week night meal for the budget conscious family
Chicken tenderloins (I used a total of 12 tenderloins)
I can of Artichoke Hearts
1 tbsp butter melted
1/2 C Parmesan Cheese
1/2 C Bread Crumbs
Preheat oven to 350. While oven is heating place tenderloins in a rectangle baking dish. Take can of artichokes and pour out the juices over the chicken. Take your artichoke hearts and cut them up and sprinkle around on top of the chicken. You don’t need to chop them up small, you can use bigger chunks. Melt 1-2 tbsp butter in a bowl and add bread crumbs and parmesan cheese once the butter is melted. Stir the mixture together until they are combined. Should look a little crumbly. Sprinkle breading mixture over the chicken and artichokes and drizzle a very small amount of olive oil over it. (Olive Oil is optional). Bake for 40 minutes uncovered.
