This savory Citrus Bruschetta Chicken takes under 30 minutes to prepare and has an exciting twist of flavors that will leave you wanting more.
I love a good home-cooked meal but come summertime I will make any excuse not to turn my oven on. So you can imagine that things get pretty boring when it comes to dinner. Not wanting this summer to be a repeat of every summer I decided to come up with a new recipe that pushed my creative limits and that also allowed me to whip something delicious up but without the use of my oven. This Citrus Brushetta Chicken can be whipped up in 30 minutes or less and is the perfect meal for 2.
Anyone who loves to cook will tell you that they keep certain ingredients on hand. My number one must have is Bertolli Organic Extra Virgin Olive Oil. I use it in just about everything I make. Whenever I see a recipe that I want to try I can get really turned off if the ingredient list is long. I know, call me lazy but I prefer to keep things as quick and as easy as possible in the kitchen. I’m rarely spontaneous in the kitchen but this summer has me wanting to try new things. So, I came up with this citrus bruschetta chicken that was so simple but I challenged myself by using some ingredients that I’ve never used before, like kumquats and purple cauliflower. I love how pretty it looks all plated and it was flavorful and tasty too. I suddenly feel even more inspired to try new things in the kitchen.
Citrus Bruschetta Chicken
For this simple recipe you’ll only need a handful of ingredients:
Bertolli Organic Extra Virgin Olive Oil
2 Pieces of Chicken Breast
Salt & Pepper
Step One: Pour about 1/4 C of Bertolli Organic Extra Virgin Olive Oil in a frying pan with a tablespoon or 2 of fresh chopped basil and heat. Season chicken breast on both sides with salt and pepper and add to oil. Cook on medium heat until cooked all the way through. I did about 5 minutes on each side but you may have to do more or less depending on how thick your chicken breasts are.
Step Two: While chicken is cooking you can prepare your citrus bruschetta. Chop up one tomato into small pieces and place in a bowl. Add about 1-2 tablespoons of fresh chopped basil. Slice kumquats in half and squeeze juice into a bowl. Using a kitchen scissor cut the kumquats into small pieces and add to the bowl with the other ingredients. (Kumquats can be eaten whole, skin and all.) Take 1-2 pieces of purple cauliflower and chop up into very small pieces. Add to bowl. Finish the brushetta off with 1-2 tablespoons of Bertolli Organic Extra Virgin Olive Oil and salt and pepper to taste. Stir.
Step Three: Remove chicken from stove once cooked and garnish with bruschetta and fresh basil.
Such a simple dish but packed with so much flavor! It’s the perfect summer dinner for a stay at home date night.
