Apple Walnut Cake

I’m passionate about baking tasty, easy recipes from everyday ingredients, so you can expect lots of yummy and easy recipes from me. Cakes and sweets are my specialty, although I’ve started to branch out and am baking lots of savory goodies too. The kitchen is my creative outlet and to de-stress, I bake. Can I get an amen? I find baking so relaxing and therapeutic. Except maybe for the cleaning-up-after bit. That part’s not so fun.

Today’s recipe is a personal favorite – apple walnut cake. It’s perfect year round, but is especially tasty in Fall!

This cake has it all.

It’s got a crispy top that’s drenched with a sweet, sticky brown butter glaze and it’s laden with firm, tart apple chunks.

It’s even got walnuts for an added crunch.

The cake is also moist. Like, very moist. Very, extremely moist. Very extremely outstandingly moist. I think you catch my drift, yes?

Don’t I sound like a real estate agent trying to sell you a house? It’s got this and that, it’s full of features that you’ll love… Riiiiight. Moving on.

It firms up a little when kept in the fridge, but you can slice yourself a piece and microwave it for 15 seconds to warm it a little. Then you can serve it alongside a dollop of whipped cream or a scoop of icecream. It’s like apple pie but not really. So so good.

Apple Walnut Cake

2 cups white sugar
225g butter
3 eggs
3 cups plain flour
1 tsp salt
1/2 tsp baking soda
1 tsp ground cinnamon
1/8 teaspoon ground nutmeg
2 tsp vanilla extract
1 cup chopped walnuts
3 cups sliced apples

Brown Butter Glaze
3 tbsp butter
1 cup cup icing sugar
6 teaspoons cream

Preheat oven to 175C. Butter and flour a 10-inch bundt pan.
Cream together the butter and sugar. Add eggs one at a time beating well after each addition. Set aside.
Sift together the flour, salt, baking soda, cinnamon and nutmeg. Add to wet ingredients and mix well.
Stir in vanilla, walnuts and apples. Mix well and pour into prepared pan.
Bake for approximately 1 hour or until toothpick inserted in center comes out clean. Set aside to cool in pan for half an hour, before turning onto a wire rack to cool completely. Drizzle glaze over cake.

For glaze, melt butter in a small, heavy saucepan over medium-high heat. Cook 3 minutes or until butter begins to brown; remove from heat. Add icing sugar and cream, stirring with a whisk until smooth. Drizzle glaze over cake. Let stand until glaze sets.

    1. Did you peel the apples? How did you slice them (size)?
    2. What is icing sugar? Is that like powdered sugar?

    1. I didn’t peel my apples and finely diced them. I love having chunks in my cakes. Icing sugar is powdered sugar – it’s just the Australian term for it šŸ™‚ Let me know how you go!
