Penne a la Vodka is one of my favorite pasta dishes! We have a few local restaurants that really make it well and probably since the first time I ate it, I've been trying to master Vodka Sauce. Easy Weekday Meal: Parmesan Crusted Chicken & Artichoke Bake

A friend of mine had shared this recipe with me a few years ago and I totally forgot about it until I walked passed a big jar of artichokes in BJ’s a few days ago. This meal is so incredibly easy to make and literally takes only a few minutes of prep work. Ingredients: Chicken tenderloins (I used a total of 12 tenderloins) I can of Artichoke Hearts 1 tbsp butter melted 1/2 C Parmesan Cheese 1/2 C Bread Crumbs Instructions: Preheat oven to 350. While oven is heating place tenderloins in a rectangle baking dish. Take can of artichokes and pour out the juices over the chicken. Rigatoni Alfredo

Alfredo Sauce is a favorite among my family members.  I'll attest I know no one who despises it.  My very first experience with Alfredo Sauce was at Red Lobster almost twenty years ago.  I had it along-side a fresh batch of their Cheddar Bay Biscuits for dipping.  Needless to say, it ruined my appetite by the time my meal arrived and I could hardly fit another bite.  It was delicious!  At any rate,  my husband and I both enjoy Alfredo Sauce and my two year-old daughter cleaned her plate this evening. We had a good laugh when she picked up the plate to lick it. {Best Chili Recipe EVER}

I'm not a fan of veggies and I'm certainly not a fan of beans so you can imagine that our menu here is pretty boring. My hubs complains that it's the same thing. Well, my bestie, Karen, was telling me about this to-die-for chili that her husband made. Willing to try something new, I asked her for the recipe. Now, I changed the original recipe just a bit for no reason other than I couldn't find some of the ingredients and boy, oh boy, it's delicious!
